Organic Cilantro Hummus

My family and friends often ask me how I can afford to eat mostly organic and vegan. I simply shop for sales and bargains by comparing prices. I try to avoid cans unless they’re bpa free, organic and on sale such as the garbanzo beans. I usually stock up when they go on sale because I can make hummus that goes with almost any dish and really easy to make.

INGREDIENTS

2 15-ounce cans chickpeas/ garbanzo beans

Liquid from the one can of chickpeas

1/2 cup tahini (sesame paste)

7 cloves garlic, peeled and minced, or to taste

Sea salt and freshly ground black pepper to taste

1 tablespoon ground cumin

1/2 teaspoon cayenne pepper

Juice of 1 lime

A generous handful of chopped fresh cilantro

1 teaspoon of olive oil/ coconut oil or Udo’s Oil (3.6.9 blend) *optional*

PREPARATION

  1. Put everything in the blender and ; add the chickpea liquid
  2. Taste and adjust the seasoning
  3. Serve with pita bread, as a dip, in a sandwich/ wrap etc.
